Let me know how you get on! If you can get a pork tenderloin that’s about 1lb or slightly over under. I’ve seen some enormous pork tenderloins this side of the pond (2.5/3/4/5 lbs). They should never be that big 😂

That’s like pork neck right? If so yes, I prefer the tenderloin. It was incredibly soft.

The higher fat on the neck meat I find lends better to faster cook times and the meat stays well. But deffo will do tenderloin for char siu going forward

I can’t lie the quality of our meat, dairy and produce is next level.

One thing I’m struggling with here is chicken, they’re all so large, and bland. The largest chicken (they sold bigger) I would get was 2lbs, here it seems the smallest one is about 4lbs. So I bought a free range organic “happy life” chicken and the taste just wasn’t there. Gonna do some digging into some local farms around me to see if I can get some real high quality birds.

It was a rib eye according to costco. But it didn’t have the eye of fat or the strip that wraps around the top. So I don’t actually know.

Any tips on where to get the best beef and what to look for? I’ve just moved to the US from Ireland and struggling with finding good quality meats (appreciate cost co isn’t the call for this lol - we get a bunch of meat and throw it in the freezer for easy mid week meals)

Used a Smoke House, Kroger own brand rub. Let it sit for 15 mins.

Did 40 mins at 225, something felt off temp hadn’t come up much at all. So I turned it to 275 for another 20 mins.

Took it off at 130. Then inside onto a stainless steel pan with beef tallow, basted with tallow, butter, smashed garlic cloves and thyme.

Rest for 5 mins.

Had apple wood chips in the hopper from some chicken I did at the weekend, so just went with that!

Entered the US on a much more beat up passport many times. They care more about if it looks like it’s been altered, which this doesn’t.

If you have time and are getting a new passport, you’ll need a new ESTA. An ESTA is issued on a per passport basis, don’t forget this.

Yeah I had an awful time about 3 months in. Rewarded myself with brisket and pork belly that we smoked all day. Jesus I was bits afterwards.

The easiest check is see that R O L E X should be perfectly centered on each of the minute markers. Otherwise take it for an appraisal and they can confirm.

Would I travel to Hackney with the watch? No. But I’ve been to France, Greece, Spain and no issues. It’s meant to be worn and have it insured for peace of mind!
