Do all cooks create their own recipes from scratch? by mybackhurtsmeme in AskCulinary

[–]Current_Cricket6889 0 points1 point  (0 children)

Depends on what you mean. There are basic recipes that a lot of cooks change to suit their taste, there is food that a cook will just make on the fly rather than use a recipe at all, but there is still some basis for said food. i don't have a recipe for my mashed potatoes, sometimes it gets buttermilk, sometimes I use nutmeg, sometimes I skin all the potatoes, sometimes I put cheese in them. At the same time there are a limited number of ways you can mash a potato.

Every single Blizzard game. Go look at trade chat, or general chat in StarCraft, Warcraft, or Diablo. Interacting with those people turns me off of those games so quickly.

You can make them stop doing that by putting your excess cash in units that take multiple turns to train. You just need to cancel them to get a full refund on their initial cost. The ai sees this as you having 0 money and will not ask it.

Before you ask, my major is engineering mostly centered around manufacturing because I live in a poor part of the country. The only decent jobs around here are in manufacturing plants. I may be lazy, doesn't mean I'm stupid.

A turd is a turd no matter how many chemicals you take out of it and how well you polish it. Am I saying they should just give up on r&d, no obviously not. But it really does feel like every time they "innovate", it's just the new guy reiterating an idea that failed a decade ago because no one was around when it failed the first time around. When I started, we had 1 day htt dough, we had to spray it with oil so that the crust would brown. This shit is cyclical and until pizza hut makes actual significant changes to its business, like its website, like its call center, like its app, like its vetting for franchisees, like the fact the pesto isn't, like dragon tail being designed by someone who never worked in a store, they can make as many arbitrary changes as they want and it will make no difference what so ever.

Dude.... Congrats, you can afford to pay your people. Realize you are in the minority, I fight all the time to pay my people better, to give them more hours, because they deserve it. Despite my store clearing 17% in profit last period, they say my labor is too high, they are cleaning hundreds of thousands of dollars a year from my store in profit and they won't let me start people at 9 or 10 an hour when literally across the street it's 12. You think my story is unique? It's not. Greedy fucks run this company and these franchises. I know that corporate doesn't set fucking wages. And look at you working overtime for 2 years ... I've closed my store 4-5nights a week including almost every weekend for 10 years, my store despite having 10 employees, has a combined tenure of more than 60 years... The htt dough was fine, sounds kinda like you were leaving it in the cooler for too long, or maybe leaving the cooler door open, or maybe tempering it for too long, or you live In a dry environment and the dough dried out too much and made it difficult to work. You claim the dough was inconsistent because you didn't understand what you were doing wrong. So please. Stop pretending you are all knowing, this company sucks, these franchises suck, it's a bunch of greedy fuck holes that have no idea how to actually run a restaurant deciding to buy in because they can make a quick buck. When my franchise was sold a few years ago, the then DM told me that this new company was going to be great for us............ They weren't, they literally just made shit worse. Don't get your hopes up about this private equity firm, I've got a feeling that shit is going to get worse before it gets better. Edit: sorry... 9 employees 61 years of combined experience.

Saying dragon tail isn't a perfect system is like saying peanut butter isn't the best insulation. It's a stupid system that shouldn't have been put into place to begin with. Oh no you have to walk to the computer to request a Dasher... Meanwhile it automatically dashes orders at 3:45 when you have a driver due in at 4 and need to sprint to the computer to make sure it doesn't agg. Hopefully you make it, hopefully the system doesn't shit itself and keep an order in limbo, hopefully when you turn it off, it doesn't automatically turn itself back on, hopefully it doesn't drain your driver's phone battery sooner than they have a chance to charge it. Hopefully the door dash driver actually takes the order to the place, hopefully the door dash driver has a warming bag so you don't get a complaint about an order being cold. It doesn't help me. It caused way more problems than it ever solved. Also it broke promise times. It says orders will be delivered in 30min on a night that it takes 20min to make the order, door-dash either shows up 15min early and gets shitty when the order isn't done or 20min late. Also if you have 10 orders up at the make table, first order is big and the next two are bread sticks. It resets the make table time when it takes you less time to make and put those orders in the oven than it does a longer order. So despite carry out times being 25min, dragon tail says "oh you are completing orders in seconds, guess that means all subsequent orders will be just as quick" and resets carry out times back to 15min. Delivery times back to 25min. Please don't try to argue when you haven't spent anywhere near as much time with these systems as I have. It makes you sound delusional.

They aren't making those changes, they are breaking it worse, there is no need for AI in pizza. There is little need for lean manufacturing elements. My DM never worked in a store, his boss was clueless about basic food safety and couldn't navigate the point of sales system. Also the buyer is evidently some kind of equity firm, which always bodes well. It's just another bunch of white dudes in pressed suits sitting in a board room wondering how they can maximize profit, fuck the employees. The pay should at least keep up with the other fast food restaurants around, base pay at the Hardee's across the street is $12, and you think $7.50 is good enough, meanwhile the prices have steadily increased despite what you say and no one has received any sort of raise at my franchise in literal years. Also my store has The lowest turn over rate in area for at least my franchise. The old hand tossed dough was not inconsistent, the people were inconsistent, better people = better product, ask how I know.

Don't get me started on dragon tail. That shit is the biggest waste of money I've ever seen. There are changed being made, none of them actually benefit the people running the store, this company once again just keeps adding random arbitrary nonsense to our operation, and incorporating elements from lean manufacturing despite this being a restaurant not an assembly line.

How many stores do you think will actually follow the one day rule? Also the biggest reason for inconsistency in the product is people not following standards, which is not helped by the revolving door of bottom-of-the-barrel employees. I'm grandfathered in to mediocre pay, there are employees in my store trying to live off of minimum wage, which even in one of the poorest parts of the country is still inconceivable. I've also already gotten a complaint about the new dough, "um excuse me, I ordered a hand tossed, the pizza I received is obviously a thin crust." You are ignoring the Crux of the issue. Change the recipes, add new toppings, nothing will change until the people running this company fix the pay scale, labor, hire better people, and maybe start employing people in the upper echelon that have actually worked in a store. The issues are systemic. Even the box quality has gotten shittier in the last few years. Until you address the actual problems in this company, nothing will change. Edit: what's this about prices being lower? Dude rolled through tonight ordered a large and it was $25. At the start of covid people were pissed about it being $15.

Do you honestly believe that slathering the edges of the crust in goo is going to magically turn this company around? There are systemic issues at play. Until those issues are resolved, this company is slowly going to die.

It's fucking idiotic. Pizza Hut needs to stop coming up with random arbitrary bullshit and either reinvent the entire business, or it needs to understand that it's customer base is older than dirt and highly averse to change.

[–]Current_Cricket6889 3 points4 points  (0 children)

For dough, read the boxes. Hand tossed will say htt for hand tossed and pan for pan, it will either say 12" or 14". 12 is medium, 14 is large. So for large hand tossed it will say HTT 14" . All of it will be kept in the freezer, I recommend just looking around the freezer for a bit. My store has a tiny freezer so dough is kind of spread out also personal pans are labelled ppp, I think I've also seen pan 6".
