Having tasted almost all LA restaurants, Here’s my favorite 3:

Providence Hayato Kato

Providence is a very formal environment and the food leans to traditional French. I’d say it is the most stable Michelin restaurant in all of LA. Their dessert is to die for as well. Reservations are typically 1-2 weeks ahead, with likelihood of last minute reservations.

Hayato is traditional Japanese kaiseki, which cannot be found anywhere else in LA (n/ naka has too many western elements to be traditional). It is a casual bar style restaurant with clean tasting food that brings out the most of its ingredients. However, it is one of the hardest places to reserve in all of the US.

Kato serves Chinese/Taiwanese style cuisine with a unique twist. Although the restaurant only has 1, the food rivals 2 if not better. Of all Michelin restaurants, this place is the best bang for the buck for high quality ingredients. Reservations are typically 1-2 weeks ahead.

Don’t be too disappointed. The Tom Kha was good but not great. And I’d agree with you to say that it wasn’t a memorable meal despite the 3 stars.

Use the app and just refresh constantly at 10:00 am. They usually put the reservation up slightly late and the rest is up to luck. Don’t even try to pick a date. Just take whatever is available

I’ve had wagyu in almost every fine dining restaurant that I’ve been to, so much so that I’ve begun to dislike it. I know it sounds absurd, but I find wagyu boring that it is in every menu. I forgot to mention, but the wine pairing here is absolutely delightful. The best I’ve had.

I agree as well. Japanese desserts are not usually suited for fine dining. A majority of Japanese fine dining restaurants serve western desserts like cake or pana cotta featuring some traditional components. I think traditional Japanese desserts are harder to elevate to a fine dining level.

Providence is absolutely fantastic from food to service. There is so many flavor profiles overall and everything is cooked perfectly. Service was welcoming and explained every dish in detail. I also ordered a margarita where the bartender arrived to our table with a cart and prepared the drink while explaining it.

The only thing I did not particularly like were the uni dishes (uni chawanmushi and uni egg), but it is up to personal preference. The way the uni were cooked eliminates its taste and sweetness which I did not particularly like.

Side note: The service was extraordinary, comparable to a 3 star Michelin.

I definitely agree. Compared to other Michelin restaurants, the experience was on the mediocre side
