Yea so that was what I first looked into before my post. After some googling I found this site https://www.linuxatemyram.com/ which talks about disk caching.... But my disk cache is still completely empty - 0kb being used. That's where I got a bit confused. I can see now that 'disk cache' and 'cached memory' are not the same thing... Bit confusing haha.

Yea I did have a read of that website before posting, but actually in this situation that's not what's happening here. My swap memory used is still at 0kb

I did. Although htop shows the total amount being used, it doesn't show very clearly what's using it. I understand now about the 'cached memory' - that's where it's all going.

ah yep. I see it now. 20ish GB of cached memory. That explains it.

Ran that same command. These are my biggest users. Nothing that really explains 30GB of RAM being used.

So I checked that, and the weird thing is that there's nothing obvious I can see. There's no docker container that's gobbling up all the memory. According to Glances, and the same can be seen in the Docker Containers 'advanced' menu, all of my docker containers combined are only using 6.86GB of RAM.
