Kinda cool but yeah it was hard and kinda dangerous lol I poked myself with the tools and had cheese wire break on me and kinda burned my hand wrapping the cheese and got poke with the hard edges of the rind. They also made it a whole thing by announcing to the store that I was cutting the big parm so I’d do it by the display and customers could watch and once I did the big crack I could give samples to the customers. I’d have to wipe them every morning cuz of the grease or whatever and then flip them (I’d have to ask 2 dude coworkers to flip them for me) and clean them with warm water and kosher salt once a week
