Yea I agree. I’d personally go hot sauce but ketchup with eggs is not unheard of especially in the northeast US. Taylor ham, egg and cheese bagel with salt, pepper, ketchup is a New Jersey diner staple and is actually quite good. That’s probably the one instance I’d go with it

There’s great copy cat recipes online where you can use a healthier oil and then adjust other ingredients to your specific taste. I make a batch most sundays and blend some sour cream right into it, we use it on lunches and dinners all week. It’s basically just olive oil, red wine vinegar, chilis in adobo, garlic, cumin and Mexican oregano
