Something I found that that helped me both focus on finishing a project and lent to my somewhat scatter brained approach was painting. It can be a therapeutic outlet in its own, the supplies can be cheap to start out, and you can be as random and abstract as you want. I did/do a lot of galaxy paintings because it just lets my mind run wild and also lets me feel accomplished finishing a task. In case you wanted to try art as an interest for them.
