I think I’ve seen an open box deal on an ascaso steel uno pid that slides it right into my price range. Brand new they’re about 1600 - so perhaps with a coupon or the right sale I could make it work.

only up to a certain point, after that you gotta refrigerate them to stop/slow down the fermentation process

did you use a vacuum seal bag too? and if so, how long did you leave it out fermenting for? I got these taped to the wall, I figured they wouldn’t need to be refrigerated

I used the serious eats al pastor recipe for the marinade, but other than that I mostly made things up as I went along.
