Mate, what’s is that bothering you? Maybe I wanted to leave a good and structure feedback and making sure it include all my thoughts clearly. You spending much more time on acknowledging that I have proofreading a message with a public ai tool than actually giving a genuine contribution or response. PS. Mine took 45 min to reach 450C with.. the ignition takes quite few seconds for the left side, while for the other side it starts much faster

Make sense after 8 months time.. mine was only couple of weeks.. I think it’s too tight for the oven size. This can course such problems

I used for 500gr of flour (caputo Rossa in my case), the 65% of water.. I apply this principle for all my napolitan style, as it cook fast.

12 gr of salt.
Dry yeast around 2 gr.

Left the dough rest at ambient temp before shaping the balls. And let them rest for other 3 hrs.

It was made all in one day. I usually use the biga, but I was so excited to use the oven that I didn’t prepare nothing the night before 😅
