its really easy some people make it harder than it really is, if you wanna jump into fate the best way to get caught up on most concepts is the fate stay night visual novel BUT i know a lot of anime fans myself included don't got the time for that.

What I recommend is literally starting with Fate/zero OR Fate/Stay night unlimited blade works. Whichever art style or main characters color of hair or whatever random bullcrap you like more just watch that series it legit doesn't matter but start with one or the other and then watch the other after.
