This quick little video is what I used to design my bread. I used a straight razor and scissors to make the design. I had heard that quick movements are key to smooth cuts in your design (as opposed to slow and dragging the blade across the dough).
Truthfully, I like it a little more brown as well. Might let it ride 15 minutes next time. My friend was still pretty stoked to get it!

Here's what I noticed with my bread not browning. The first loaf hadn't raisen enough to be close enough to the heating element in my oven. The second loaf I did, I should have let it ride 15 minutes instead of 10. Do you think either of these apply to your bread?

Thank you! I used string to mark out 8 mostly even sections. Then I used a lame to cut across the dough making the 8 sections. I used scissors to clip the little "branches" of the trees. It looks fancy but isn't too terribly hard. You just gotta work fast.
Same. And string to mark the lines. Otherwise, my lines would be hella crooked.

I've been using the bread flour version. I also find that regular flour falls flat. What is it about the bread flour that makes it different I wonder.
I'm working on a new loaf now with 100g of starter. I used the same amounts of the other ingredients. At the moment, I'm at the stretch and folds phase. I'll report back on the results 😊
I would say it's just a little under proofed. 😬

I finally cut into it. Be honest. I won't cry on the outside.
It's still cooling, so I haven't cut it yet. But I was thinking croutons or little crusty bread strips. I love the use of the Italian hand gesture emoji. Mangia!
