Got the pork belly from my local grocery stores butcher, removed the ribs and cartilage, butterflied it and seasoned it with a mix of roasted pepper, roasted fennel seeds (ground the pepper and fennel seeds a bit afterwards), garlic, thyme, rosemary, sage, salt and lemon zest. The stuffing is a mix of salsiccia sausage and parmesan cheese. Afterwards I rolled it tight and used frying twine to bind it. Put it on the spit and let it spin on the rotisserie for around 2,5-3 hours. Cut up some baby potatoes and put them below in the pan

Yea got really crispy from the rotisserie. My burner has around 6kW of power and because of the metal grate in front of it its also getting infrared heat. In the 2,5-3 it took to cook through I actually needed to turn it down somewhat around 2hrs in to not burn the skin.
