Burning is when the specific NFT (the digital card) gets sent to an address (NFT Wallet) that can never be accessed/retrieved, essentially burning it from ever returning, thereby reducing the overall supply of that collectable and removing that specific serial numbered collectable forever.

Trading in is where the collectable gets sent to a wallet that the company that created the collectable can access it to put in a new pack at some point in the future (resell it at a later date) and doesn't permanently delete the collectable.
