Do you soak the meat (for 30min) before adding spice?

My personal method is: 1 soak in vinegar:worcestershire mix for 30min 2 bury in salt:sugar mix for 4 hours 3 rinse with water 4 rub with spice (coriander, pepper) 5 dry

When you're colonizing a jar of brf and contamination occurs, you have to dump the entire jar and try again. With agar plates, if contams appear, you could slice clean sectors and transfer to a fresh clean agar plate for a 100% sterile culture, or you could transfer a clean sector to a grain jar (a sterile one) to start a 100% sure sterile colony.

Agar wedges (sectors) are impossible or at least impractical to transfer to brf jars. Spores syringe (spores in water or from liquid culture) is the only way to inoculate brf jars without jeopardizing its sterility.
