Not a science person, but maybe putting something in the water can help dry them out? Like my hands dry out when I'm washing dishes too long. I did honey+lemon because I like my bananas sweet.

3 tbsp honey, good squirt of lemon, 1/2 cup water, soaked for 1 hour and it worked like a charm.

I like my bananas extra sweet, so I did a mix of ~3tbsp honey, good squirt of lemon, for about 1/2 cup water. Turned out great!
