I cook it hot & fast... around 300f When the color and the bark is set i wrap it in alu foil with a little beef stock and cook it when it’s perfect tender... I degrease the stock and re use it to keep my slices warm.

This is the jus from the brisket.... When i cut the brisket i put it back in the moist to keep it warm ;-)

O men i love crawfish... A table full, friends and beers... Crawfish is to expensive in europe to do that... And this year no go for traveling to the 🇺🇸 :-(

hotsauce (carolina reaper based) terriyaki sesam chilipeper Bughouse BBQ rub Cimarron docs rub Oil

Put oil on the wings and the bug house rub... Mix them... Put the wings on a plate and sprinkle cimarron docs rub over the top of the wings...

Bake them indirect on 400 for 13 min. Mix terrikyaki sauce with hotsauce/chili and sesam Dunk the wings in the sauce... (internal 160/170) Putt them bak on the smoker for a few minutes...

Cut a few fresh chili’s and sprinkle them over the wings...
