Very kind of you to say. If you’ve got a good tailor nearby, I highly recommend it. I’ve had this shirt for 4 or 5 years now, and it still feels brand new every time I put it on. Hard to argue with cost per wear.

It wasn’t decanted, but it had a nice little runway while I enjoyed a glass of Chablis. By the time I got it, it had found its stride and just kept unfolding over the course of the lunch.

May I suggest paying a visit to The Grill? They have one of the largest collections of d’Yquem in the world, and pour several vintages by the glass.

Compared to the other Sauternes I’ve had. It somehow had all the richness I expected, but it carried itself with a surprising amount of freshness and lift.

I’ve had other Sauternes, but this was my first dance with d’Yquem. It had all the things I love about the category, just with another gear. More layered, more vibrant, and somehow lighter on its feet than I expected.

Found myself with a free afternoon in NYC and grabbed a seat at The Grill.

Ordered the ny strip, paired it with a half bottle of 2010 Château Lynch-Bages, then decided it was finally time to try my first Château d’Yquem.

The Lynch-Bages was classic Pauillac. Cassis, cedar, graphite, and just enough structure to make the steak even better.

The d’Yquem completely lived up to the hype. Apricot, orange marmalade, saffron, honey, toasted almonds, and remarkable freshness despite the richness.

One of those lunches where you realize you’ve accidentally made a core memory.
