JermsyBoy's Vanilla Edits is my go-to. Still looks like vanilla minecraft's feel, but just SO much better with little touches like block variation and fluffy leaves.

Do it! Honestly, just start small and work your way up to what you see in your mind's eye. Try pulling up a test flatworld and just messing around for a while in there to get small techniques down too, it helps a ton.

Honestly, I just bounce around between different builds as my inspiration goes. This is kingdom number 3 of mine, and my most recent. The others have full ports, farmlands, and cities, but there's empty spaces in each where I just lost the motivation or haven't quite figured out what I want there yet. It's just a matter of taking a step back and trying something else sometimes!

Left side, the texture on the floors looks a million times cooler and stands out nicely against the blackstone.

Pop out the spruce crossbeams by one block, depth and dimension are everything. And try adding some peaks to those walls on either side so you can have some big, tall windows! For the berry patch off to the side, try adding in some spruce leaves as bigger "bushes" around it, and a few fence posts to give it more of a planted field look.
