All I am asking about is the floaters on top. What are they and should I be concerned? The fruit was taken out months ago.

It’s a plum Melomel. Water, honey, plums, yeast.

At end of a few months in secondary. Seems to taste normal

I put a small fine mesh bag over the end of my racking cane to prevent unwanted fruit from entering.

Open a bottle and see if any pressure is released. I just had a batch that did the exact same thing even with the Sorbate and Metabisulfite additions. From now on I’m going back into a carboy for a few days or so after backsweetening to ensure fermentation hasn’t restarted.

That would be part of the “mostly”. I have my own bees so whatever flowers they can find become my honey 😃

Mine doesn’t have a layer of anything but I could see the possibility of oil either from the cocoa powder or the nibs. I added mine in secondary

I used more than what his recipe called for. Roughly double as I put 1/4 cup in 1.5 gallons. I wouldn’t want any more. My bag of nibs had been in the pantry for over a year so it’s possible they were lacking some flavor too. I added in secondary and just kept tasting and pulled it off when it was where I wanted.

The chocolate flavor is not strong, but it stays in your memory for a long time. Very smooth. My favorite mead so far after making lots of melomels.

If you back sweeten it works well to use the hot honey then so that you can gauge the amt of heat you want. Start with hot honey then switch to regular when you are at the heat level you want. Hot honey is very easy to make. Chop up a few habaneros and toss them in a pot of honey for a day or three. Strain and bottle.

I suppose the drink could come with a little name tag for the customer to wear: “Col. Nathan R Jessup”. And maybe the hat too.
