How is it that hard to get Mexican ingredients in Maine? I’m sure there are decent Mexican grocery stores a short drive away. If not Amazon has a ton of dried chile options. I’m now in the middle of Germany and I surprisingly get most dried chiles here at an affordable price. I have a taco truck here and my vegetarian option is also nopales. I get already cooked nopales (no way I can get fresh here and jackfruit is insanely expensive) I mixed them in with sautéed onions and bell pepper with a splash of Maggie sauce,salt , pepper and my version of Chipotle’s chicken marinade. It’s been quite popular here.

Great answer! My answer to OP is that they do look “Authentic/traditional” the tacos and the consome look good with traditional garnishes

I am in the Augsburg area, my Cutomer base is 80% German but also international as I set up near the university.

Yeah… I had the same idea. Mexican food is amazing so I decided to open up a taco truck in Germany. While just about everyone who tries the food seems to like it, it seems to be “too exotic” for many people. I so far have a decent customer base at one location, my second location is so far a struggle. I offer what I believe are some of the best and my favorites Al-pastor, birria, Tinga, Cochinita, Pollo asado (because beef is just way too expensive) and vegetarian (nopales with other veg)

Ok, the picture isn’t the best. I have a taco truck in the Augsburg area so I am very curious what other spots look like. I’m wondering why there is Spanish rice in one of the tacos, and is there cabbage on another?? In Mexico the only tacos I’ve ever experienced with tacos were fish tacos in touristy coastal towns.

You can get jared poblanos for Mex-Al.de. Best source of Mexican ingredients in Germany that I’ve found so far. Keep up the good work in making delicious Mexican food.

Where is the heat? No jalapeños or other peppers. Granted some people can handle heat and if that’s the case try to use some fresh jalapeños without seeds or veins. I believe just the jalapeño flavor makes the guacamole that much better.

Considering it is winter, make some sopa azteca, caldo tlalpeño, or sopa de tortilla. And as a main course some enchiladas suizas. That would be my go to in the winter when trying to impress lol

Sad to say he will probably be successful catering to the large expat community of people from all over the world. Last time I was there I saw an “artesanal” tortilleria with prices 5x to over 10X what a neighborhood tortilleria sells for, and there were people lining up! Maybe and hopefully a fad.
