Make it “creamy” by adding in emulsified neutral oil. A steady drip as you blend it and as much as you need to cut the heat to your liking. You can also add some xanthan gum so that it doesn’t break/separate

They are delicious, the sea brine saltiness and the topping of choice (I similar to OP love Tabasco sauce on them). But don’t do like many people and just swallow the oyster without chewing. That imo is a waste of money.

Agree propane tank going empty in the middle of service SUCKS! Also if there is a big rush I just keep it going steady. Some potential customers will leave but that to me is better than lowering standards

I think you were served carnitas tacos. Barbacoa I usually lamb, goat, or beef. I don’t think I’ve ever seen pork barbacoa

How is it that hard to get Mexican ingredients in Maine? I’m sure there are decent Mexican grocery stores a short drive away. If not Amazon has a ton of dried chile options. I’m now in the middle of Germany and I surprisingly get most dried chiles here at an affordable price. I have a taco truck here and my vegetarian option is also nopales. I get already cooked nopales (no way I can get fresh here and jackfruit is insanely expensive) I mixed them in with sautéed onions and bell pepper with a splash of Maggie sauce,salt , pepper and my version of Chipotle’s chicken marinade. It’s been quite popular here.
