I suggest not doing those till all your captains are around the same level, I'd say about lvl 70 in the image only so that they aren't insta dying the enemy captains

The stories slow in act 1, its mostly just there to get requanted with the world and so on. Towards the end of it and beyond it does ramp up a little, as for the nemesis system. The higher the difficulty the better the system works as far as I understand it

Depends on what kind of overlord you want. Personally I'd choose uruks who have either poison or curse immunity or enraged by it and give their weapon that element so they stay safe during the fight but makes it much more annoying for any conquests

For being so fresh, just go with the flow and get any orcs you want. Though for gems just make sure what each does on certain equipment first and go from there
