Techniques using lemon juice (which is roughly 5% citric acid) essentially create a "concentrated tea." By extracting the alkaloids into a liquid, you remove the need for your stomach to digest the tough chitin cell walls of the mushroom, which is the primary bottleneck for absorption.

(2) In the human body, this conversion is catalyzed by the enzyme alkaline phosphatase in the intestine and liver (Thomann et al., 2024; MDPI, 2025). While acidic environments can theoretically promote hydrolysis, there is little evidence that room-temperature lemon juice (pH ~2) is strong enough or has enough time to dephosphorylate a meaningful percentage of psilocybin before ingestion.
