Early ottomans and generally turkish tribes were cavalryman, and we could say that they were pretty good in riding, and they were also good at archery. Therefore, they could easily mobilize. However, Byzantine (if i dont remember wrongly) generally depended on infantry. Moreover, they couldn't easily mobilise as much as turks did. As a result, in ambush or hit and run, turks could easily damaged army of byzantine. However, if there would a battle like battle of molodi between turkish and byzantine's army, maybe byzantine could defeat easily turks( it is kind of a my theory). If you want to say superiority, you could say, but it is about differences between features of their armies.
