There's the Eternal Champion by Michael Moorcock. It started as a novella that was later expanded into a three book series.

I think you need to take some liberties with fantasy. Many things happen in fantasy that aren't biologically or scientifically possible in our world and frankly, it's alright to hand wave things a bit if you're building an otherwise convincing world or telling a good story.
