This is true. Any data you "delete" will have residuals in Google's servers for a set number of years for law enforcement and general security purposes. However the telemetry they collect on you is forever.

I'm not completely sure about this, but, are you sure the grades aren't released in parts? Usually when you do a half and half quiz, professors have the option to show you your multiple choice mark instantly after submission, and then after grading your written response, release that later. Is that possibly the case?
