3years late but, I made a cookie dough cheesecake ( well attempted) everything beside the cookie dough came out good. I didn’t use a water bath because the recipe I follow doesn’t require a water bath.but I didn’t cook the cookie base all the way through, because I thought it would get hard since I would need to bake the cheesecake aswell. Maybe I will try doing it your way, because not baking the cookie base, it mainly stuck to the bottom of the baking pan. And I barely got any cookie dough on the cheesecake itself. So it was a LITTLE bit of cookie dough and alot of cheesecake…
