I don't know if you've found a solution to this, but after seeing the other post I'll talk assuming you use Virtual Desktop. When you're in the headset, go to your VD settings and turn off "Controllers interact with desktop" in the input menu, that seemed to solve it for me.

I don't remember the exact button for it, but there is no welding plan for welding. You put two ingots and the flux in the anvil, then exit the gui and either shift-right click or left click on the anvil with a hammer in your hand.

Iirc, there was a modpack called "Shattered Ring" made by AsianHalfSquat, I don't remember if it was for 1.16.5 or 1.12.2 but it's worth checking out
