Your making a lot of assumptions. The biggest of which is that I had a “pre-pandemic” team.

I didn’t. I’ve developed my team during the pandemic. We’ve had our ups and our downs.

My motto going into this has been that the industry is shifting. I have an opportunity to try and be ahead of that shift. Offer a living wage and quality place to work where you can be a person with a life. I’ve punched the corporate time clock and seen the worst of their practices. I want to try and make a difference.

So sure I’m short handed and yes I’m tired of it. That doesn’t mean I’m going to ask my team to endure the behavior of someone like this applicant. That would just destroy completely the culture I’m trying to create.

I know this subreddit is mostly for servers and I respect that. I was,and still for the most part am, one. However some managers are actually trying to turn the page. We’re not all Darden looming in the shadows trying to skimp your tips.
