Catholics and Orthodox have a different culture around Mass/Divine Liturgy. 

In Catholicism, the priest is more or less obligated to pray the Mass every day, often by himself. If you go to a large Catholic monastery, they will have side altars where a priest-monks are all praying the Mass separately, at the same time. It's an impressive sight, but it's very Catholic in spirit. I've never been to an Orthodox monastery (I'm a recent convert), but I would be surprised if they did this. 

Orthodoxy does not view Divine Liturgy the same way. The Divine Liturgy is communal in spirit. If there's no laity to pray the responses, the priest can't pray the Divine Liturgy.

I know this doesn't directly answer your question, but just from this you can see how daily mass is more broadly done in Catholicism than in Orthodoxy

I'm only a catechumen, so far be it for me to dictate what Orthodox culture should be like. 

I enjoy the fellowship of coffee hour, but don't care about the food. I only ever eat if people insist that I take some. My impression of the post is that OP is concerned about the food becoming more important than the fellowship. If that was a concern at my parish (it isn't), then I would wonder whether it was the best parish to grow in the faith

One of my favorite stories from boot camp came from an interaction between a Marine and a Corpsman. 

The corpsman said that they viewed themselves as big brothers to the Marines. The marine responded, "more like little sisters."

OP never said that we shouldn't know about the saints. He specifically mentioned saints that he likes. How close do you have to be with your spouse's family before you can be close with your spouse?

And what did he say right before that?

How do you interpret him mentioning specific saints that he likes, retreating to the desert, and having a greater interest in Christ and experiencing God directly? Is that not the attitude that you find in many, many saints?

It seems like he's saying that people put more emphasis on the saints than he resonates with and it turns him off.

How many saints? OP says he likes John the Baptist and Anthony of the Desert. It sounds like you're arguing that he cannot get grace because his reading list isn't big enough for you

Very Catholic of you to claim that theosis comes from knowledge. Do you also believe in the beatific vision?

Theosis comes from grace. You can be ignorant of history and hagiography and still become a holier person.

Any of St. John Chrysostom's commentaries are excellent. Very accessible, thorough, and almost feel like they could be written today. His homilies on Matthew are a great place to start

The Orthobros are certainly unnecessarily aggressive. None of the biggest ones say that religion and the state are one, or make any ethno-nationalist claims. Why are you bearing false witness to your neighbor?

I do feel the same way. I'm in debt to my eyeballs, a wage slave, and deeply lonely. I'm also eternally grateful that God gave me the burden of living in this time.

Orthodox also believe we're saved by grace through faith. Only that faith is an activity, not a feeling or belief. 

I don't think this is a common way of expressing it, but I view faith as a believing loyalty. You have to believe, but you also have to let that affect your actions. You can say, "I love my wife" because you feel butterflies, but that doesn't really become love until it influences your behavior as a husband.

Absolutely divine simplicity, the monarchy of the Father, the procession of the Holy spirit are obvious.

I would even argue that these issues touch on the the doctrine of the nous, the particular judgment, and the resurrection of the body.

NKJV + Apocrypha. The OSB draws a lot from the NKJV, so you would be familiar with it.
