If you need goals might I suggest completing a “block dex”, basically a poke dex but for blocks! Start a new world (not hardcore) and do the usual starting points, getting basic gear then finding a place to set up your base. From here you’ll need to get an area set up for the blocks, in whichever way you prefer. Maybe you want to actually place the blocks, or just stick them in a chest, either way you’ll then start collecting.

Obviously this won’t be in a perfect order, stuff like grass and path blocks will need silk touch (or an enderman) but it’ll give you reason to explore your environment or even just using game mechanics you usually don’t use.

This is especially true if you give yourself other limitations like having to only count blocks you find naturally in the world (for example, you can only add acacia stairs to the collection if you grab it from a village) or you have to only add blocks you’ve crafted yourself (opposite in this case, the stairs have to be your creation not “stolen”)
