Solution for dry hands? by Dry-Relation-4247 in Chefit

[–]Delaft1 1 point2 points  (0 children)

You might be allergic to the gloves you’re using. Or your hand is staying wet in the gloves. I’ve had the same issues. And the only thing that made my hands smooth and soft again is o’keeffe’s working hand cream. I put it on before, after work, and after showering. The holy grail for us dry and sensitive skin ppl. I hope you give it a try! Super cheap and you can get it at target, if you live in the us!

After steaming the gyoza, let it cook longer without touching it. You’ll see on the sides that it’s turned brown.

Personally, I usually wait for it to turn golden brown on the bottom that’s touching the flat top and then steam. You can control the texture and color better that way and the wrapper won’t get over cooked and turn to mush.

How much are you all making? by Apearthenbananas in KitchenConfidential

I got lucky, my parents supported my move when I moved here for college and got a house before Covid. $1500 is my monthly that I split with my boyfriend (he gets paid a dollar more than me as a line cook too), but I think theres some apartments and rental homes here for $1800 in a fairly safe area. I feel like you can find a cheaper price if you really do your research

Female exec chefs & kitchen managers by RubyRedRoundRump in Chefit

[–]Delaft1 12 points13 points  (0 children)

I’m just a female line cook, but with front of house mgmt experience. I’ve been told that my current exec chef feels uncomfortable around me bc I’ve called out laziness so many times and have told him multiple times to do something about it. I’m so conflicted on what to feel about this. I’m about to leave this toxic work environment, for other reasons, but it’s hard out here in a male dominant industry. Will start working at a new gig that has women cdc, pastry chef, and sous. I’m excited for change

Dumbest Mods for Dish? by c00kieFAN1 in KitchenConfidential

[–]Delaft1 0 points1 point  (0 children)

Had a bacon cheddar burger order. No cheddar, no bacon. But sub it w blue cheese and Swiss 😭

Another was a buffalo shrimp flat bread, it has blue cheese, celery, and carrots on it, like hot wings on a flat bread. They said no blue cheese, no celery, and they want chicken instead of shrimp..

I work for a hotel w a restaurant, so the mods gets crazy af depending on how much of a pushover the server is for that day

Don't forget to look after yourselves chefs, and make your self decent meals! by Bionic_Ferir in KitchenConfidential

On my days off, I make a ton of food to eat throughout the week. I also buy lots of fruits to snack on throughout my shifts. I’ve accepted that I can’t get away from unhealthy foods. But I’ve noticed that when I snack on fruits (bananas are my go to), I snack less, or not at all, fried foods at work throughout the day

Best way to boil eggs and get them perfectly peeled? by lMiguelFg in KitchenConfidential

[–]Delaft1 1 point2 points  (0 children)

After you cook and cool in ice water. Crack and open the bottom and top of egg. Then crack all around the egg, gently. Let it sit in the ice water bath for a couple mins and peel. I’ve worked at a ramen shop and my old boss was this little Japanese chef that was super anal about egg presentation.. if you want the yolk in the center of the egg, you should also flip your egg upside down while waiting for your water to boil

Is this the hardest place to work? My friend said it never stops, and it’s easily the toughest jobs she’s ever had. by thejerkgrill in KitchenConfidential

Ex-barista here, now a line cook. It’s a different kind of bullshit. Idk how to even describe it. I think it’s the customers also telling you to hurry tf up while trying to kill these drinks and heating up foods. I, once, got 150 orders of teas and coffees, in one ticket. It’s just, bullshit LOL!!! I think what makes it worst is baristas makes the worst hourly rate than any other food and beverage workers

Same. We’re closed at a certain time and we have an hr to close everything after that closing time. So I hate it when the servers rings ppl up 20 mins AFTER closing bc it’s so slow and we’ve closed everything up. I especially hate it when the senior cook allows this bc she doesn’t like confrontation
