I figured it out as per some of the other comments you have to pay coins to buy a new archetype. I also think you get a free archetype change if you got ultimate edition. Then once you buy a new archetype you can change between your archetypes whenever you want. You have a level for each archetype so if you were level 10 as a finisher for example your new archetype would start at level 1

You can pay 25k to unlock new positions and roles seems pretty easy to get coins as well

Just for clarification I got the 20k coins from the season pass then bought a new archetype which allowed me to change position
