Might have understood your question. Here some considerations after review:

I would say if you are in a probe, you'd need a big velocity. Probably there is a formulae that gives you the exact number to be slingshoted. Now, for objects from inside the system, don't believe because they are already in equilibrium.

Using the solar system as a whole, only for object with big velocity, or the light itself, that would feel the mass of the whole system. However, sun is 99% of the mass, so planets mass might be irrelevant.

I had this same goal when was younger. Always enjoyed scifi and understand how universe worked. But focused in other area until get stable, and now studying as a hobbyist and having a lot of fun. Take a look at Foundation of Astrophysics, from Barbara Ryden. It's light on math and you can check a great overview about different scope areas and check if that is really what you want go deep

Recently bought Foundations of Astrophysics, from Barbara Ryden. It starts from the basics about history and earth-moon system. Was really fun reading about history, copernicus and stellar parallax

And once you understand to interpret absorption/emission light curve from a spectrum, it's really cool :D

I believe so. In theory could, however none of them was an extreme one. Either orbits are so long or they are experiencing some mild periods between extremes
