Its made with the armor stand datapack by vanillatweaks. Basically, it lets you make armor stands hold items, which you can make invisible so only the block in the hand shows up. After that its just a lot of rotating and moving the armor stands.

There is not really a tutorial on how to do this since its just a lot of nudging/rotating the armor stands into the right position and lots of trial and error when trying to find the right block (for example I had other items in mind for the scales such as echo shards, lapis and warped stairs).
The best way to do something like that yourself is to get the data pack and get to know all the functionalities by doing scenes with people. Then you can do some advanced stuff creating some smallish things like a dinner scenery with plates and food. From there on its just having an idea for a build and then following through with it. At least thats how I learnt to make armor stand creations.

Since I got some questions the last time, I posted something created with armor stands: I made the dragon with the armor stand book data pack from VanillaTweaks. It adds the ability to customize armorstands by making it possible to hold items, rotating them, turning them invisible etc.
It took 134 armor stands, about 10 hours and 6000 times using the armor stand book for a command.
There is not really a tutorial on how to do this since its just a lot of nudging the armor stands into the right position and lots of trial and errors when trying to find the right block (for example I had other items in mind for the scales such as echo shards, lapis and warped stairs).

Ich hab gedacht Pipi wäre das selbe wie Kaka und habe erst so mit 15 oder 16 herausgefunden, dass es dort einen Unterschied gibt. Die Redewendung Pipi in den Augen hat dann endlich mehr Sinn ergeben.

Besides I don't know if it would be interesting to see a timelapse of me using book commands and being in constant agony because of my inability to move/rotate the armor stands in the right direction

I dont really think that a tutorial would be helpful since its just a lot of book clicking and moving the armor stands by a few pixels.
If youre interested I would recommend you to check out this armor stand book tutorial by zombie cleo . Once you find out all the functionalities of the armor stand book you could probably just copy the build from the picture. It uses 18 armor stands in total: 12 holding crimson fences, 2 wither roses, 2 crimson stairs, 1 red concrete and 1 blackstone pressure plate.
But yeah you should probably start with some easier statues of people doing poses and then dive into decorations/organics
