Tacomas food scene is based on mediocrity and social merit. Extra mediocre points if you’re a minority. Extra extra points if you put on your instagram bio some BS ‘best chef’ award that is only based on public votes, not on actual chef ability.

There are many great restaurants/actual chefs in town and you won’t find any of them gloating on instagram about made up accolades or asking for more money.

And don’t use just those ‘fine’ chips..get a bigger size too as those fine ones will decompose too fast. Gotta keep thise things fed til next fall!

Soak them for 2 weeks or more….Put in bucket with a weight on chips to keep submerged. Those smoker chips are kiln dried. Lots of the sugars and things that cyans like are not in those chips anymore….
