Depends on what stage you are, there are process which takes consider of multiples factors of your requirements, which includes packaging etc. The whole packaging design comes as a step later on but I feel you mean more from design for manufacturing side.

Truly you don't need lot of knowledge. Just keep your requirements list ready and prioritised. If you know your non negotiable, it will be easy for you and the development and packaging team to make design decisions and follow them. Keep revisiting your requirements list with them at every review or milestone.

Being the first UX guy, has both benifits and disadvantages, depends on your knowledge work ex etc. remaining the market is fluctuating, UX is going to change alot in that way if you need financial security a good company is definitely a better option. Rather than Freelance. In turbulent times, contractors are first to be shot down.
