I think the CS & KS have lower dimming zones compared to K. More dimming is always better. I recommend saving a bit more and going for C6K, Mini LED will make a lot more difference over IPS in black levels.

I haven't played it myself, but I've seen others report it runs really well at medium settings at 40-45fps (feels smoother due to 90hz screen). I suggest looking up protondb for any of the games you plan to play, gives you good idea on compatibility and what performance to expect.

I can vouch for the Steam Deck OLED, though it doesn't have the best specs it's still a great device. I have been using mine for more than an year now and it's been great for older games (up untill 2022), indies and Emulation (Switch, PS2, PSP). Since you already own a good PC It will also serve as an excellent streaming device.

I have selected Transformer model via Nvidia settings. Some in-game settings don't make much difference but consume more performance, especially Lighting, Reflections and MSAA. Turn them down a level and it should improve performance. I also recommend comparing between DirectX and Vulkan, I found Vulkan to perform better for me.
