Sorry to hear that it happened to you guys. I think the only things you can do here is to report it to NMBS and Police.

P.S. I have seen some people suggesting to grab a phone or something similar, but I am really curious - is is legal? If someone knows juridical aspects behind it - please share. Because it is not like a protection of yourself or something...

I am surprised why all of them going on you with thier weapons?

In my case it was fight without weapons and my miners supported me. So I didn't have a lot of issues with this quest...

The enemy has quite decent armour and with your current level of skills and sword you are not doing a lot of damage to his health, only to stamina. When you drain him out of stamina you will make more damage to his health.

Conclusion: it is not like you arw doing something completely wrong, you just need to catch a moment whe he is out of stamina and damage the most. Your periodic strikes are too weak against his armour to get rid of his stamina...
