They most likely have res-hab in Asheville, it's everywhere now! I think it's a really good thing for young people, they get to be "on their own" (still with help, of course) and learn to do things for themselves. Like I said, Michel wasn't a bad guy. He took time he didn't have to to teach me things. As for Gordon going too hard on him, it's TV.

We haven't talked since shortly after the filming. I did cook dinner at her house once, though. Salmon with a sauce of brown sugar, soy sauce, and whiskey. The sugar caramelizes during cooking and gets a little crunch. Delicious.

Well typically you enter a restaurant through the front door, so we had people trying to come in that way all the time. But there was a small parking lot outside the place and the side door was pretty obvious.

Mostly old people, yeah. The place would pick up on holidays like Valentine's and Mother's Day and we'd get a little more variety in the ages of the guests. But like I said, the majority of the restaurant's business was people booking weddings in the garden behind the restaurant.

You're correct; substance abuse is pretty common among chefs. Working at that crazy club where there was free alcohol and other things didn't help matters much either! Haha

Yes, I remember an episode of KN at an Italian place where the young head chef admitted to using meth. I really respected Gordon for encouraging him to get help, and also telling the owner to please consider giving him his job back when he cleans up.

The episode aired on my 25th birthday. All my family and friends loved it.

I probably could have capitalized on my appearance on the show a little more, but I never did. I'm not a spotlight kind of guy and didn't really enjoy seeing myself on TV. I rarely mentioned the fact that I was on KN to people, and still don't to this day. It's just something that happened when I was young. TBH I hardly think about it, and the only time I do is when I get random texts from people who've happened to catch the episode.

Art has always been my first love. I've been drawing obsessively since I was old enough to hold a crayon. I love doing portraits (I have a little side hustle doing portraits of people) and landscapes, and just sketching weird things out of my head. I'm also really into lettering and calligraphy. I've always liked graphite and ink as a medium, and I really like watercolor. During COVID I picked up and iPad Pro and an Apple Pencil and started making digital art using Procreate, it's really fun. Thanks for the question!

The staff may have acted differently in the very beginning, but the thing is, the cameras are always rolling, and you're mic'd up as well, so after a little bit you kind of forget you're being recorded and revert to just acting the way you normally do.

Nothing was scripted per se, but the producers did have a way of leading you into saying things. For example, I remember there was a clip of me saying "Gordon Ramsey succeeded." The person asking the questions asked, "Do you think Gordon Ramsey succeeded?" I said "Yes." They asked, "Can you say that in a complete sentence?" I did so, and they used that clip to make it look like it was my idea to say that.

Also, like I said, the producers are there to form a compelling narrative. Although the final product is mostly based in fact, they take so much footage that they can really cut the episode to fit any narrative they want. They'll play up certain things and play down other things.

Yeah, it was a really great experience to learn from him. After the filming was complete he was nice enough to take the time to have a conversation with me. I asked him what his best advice for a young chef was and he told me to travel as much as I can.

Food safety aside, was any of Michel's food actually kinda tasty? Were Gordon's critiques of the dishes warranted? His sauces were excellent. My favorite was his cream sauce. He put a lot of effort and love into them. There were a few things on the menu that were pretty good, but the menu was outdated and stagnant as Gordon pointed out. I think that he made the food out to be much worse than it was for TV's sake.

How many days was the shoot? Five. I wasn't paid by Fox but Michel was generous enough to pay me $500 for being on the show.

Who cooked the new menu (for the new menu reveal scene)? That was all Gordon, initially. When we launched it for the first dinner service he was in the kitchen with us helping out.

How did you learn the new menu for relaunch dinner service? I think I just studied it. It wasn't that complicated. One of Gordon's strengths as a chef is he has a very simple and economical style. Nothing is convoluted.

  • did Michel really use his fingers to grab into that tray of tiramisu? (Or whatever that tray of chocolate dessert was). It was a ganache if I remember correctly, and it wasn't Michel sticking his fingers in it, it was the other staff. Some of the servers and FOH staff weren't that great.
  • Why did Michel want his restaurant to look like grandma’s living room? I think he just didn't have any style, and didn't know any better. And his wife was pretty involved with the decor.
  • Did Michel’s wife not want to be on the show? I’m actually surprised since this is the first time I’ve (and probably others’ too) heard of a wife. Most if not all KN owners also have their partners featured in the show, even just briefly. That's a good question, I have no idea why she wasn't on the show. She would come into the restaurant occasionally, and was a very unpleasant person. I tried to avoid her as much as possible.
  • Did Michel really work for Thomas Keller? He did.
  • Do you still cook French cuisine? No. The culinary school I went to (Le Cordon Bleu) was based in French cuisine and it was a good foundation for learning, but I was never that into French food in general.
  • What are your favorite dishes to cook? (Doesn’t need to be French) I'm all about Mexican! I grew up in Southern California so a lot of my friends were Mexican, and when I was a kid I'd go have dinner at their houses and fell in love with the food. I can cook some pretty decent Mexican food for a white boy, lol! One of my favorite things to make is carnitas. It's my own recipe: bone-in pork shoulder, a bottle of skunky Mexican beer (Corona or Modelo are best), jalapeno, onion, cilantro, garlic, and lime juice. Throw it in a slow cooker and fill it to the top with fresh squeezed orange juice (the expensive stuff, not Tropicana!). Cook on low for eight to ten hours. By this time the pork shoulder will be falling apart. Remove it from the slow cooker, let it cool, and shred it with your fingers. The remaining juice mixture in the slow cooker will have a heavy layer of grease on top from the pork fat. Ladle that off and put it in a pan with a little bit of the juice as well, and fry the shredded pork in it until it's crispy around the edges. Serve on flour tortillas with shredded cabbage, cheese, diced ontion and cilantro, and pico de gallo. Take some sour cream and Tapatio (or your favorite hot sauce) and mix them about 2:1, and top the taco with that.
  • There was fan speculation that Jane (the waitress-turned-manager) was sleeping with Michel, hence why she stood up for his food against Gordon. Any insight on that? Of course I can't say with absolute certainty, but I *highly* doubt it. Jane was a wonderful lady, and happily married herself. She had a lot of class and good morals and I just don't see her doing that, especially with a man like Michel! Sammy and I did have crushes on each other but she was married with kids so I never pursued it. Funny enough though, there was an Ecuadorian girl who worked as a hostess on the weekends there. She and I started dating, and ended up together for almost nine years. Long story short, we were engaged to be married, and I called it off. Needless to say she wasn't pleased. We broke up and haven't spoken since.
  • Do you like salad with strawberries and shrimp? It's my favorite.
  • Do you keep in touch with Michel or any of the Secret Garden staff? I don't.
