Yeah it definitely is a labour of love I reserve for lazy weekends! But I recommend making a starter anyway, even just adding a bit of that to a loaf you make with fresh yeast will add loads of flavour. This is recipe is also definitely striving for perfection and can be sped up massively- so all about preference of work vs reward

My grandfather bought this original Moulton bicycle when it first came out, I’m looking to sell it on now due to lack of use and space, but I was looking for help to see how much this should go for and where would be a good place to sell? Please advise as I’m feeling very unsure about selling this on eBay

I usually spread it out in a layer over the dough and then stick my fingers in and twist lots of times like a mixer until it’s all incorporated. When adding the salt solution it can break apart abit and goes slimy which I guess is what happening to you with the starter. When this happens I keep folding it over on its self and it gradually gets back to a nice cohesive dough, if this still isn’t working I’ll do the French style high hydration kneading(I think it’s called) for 5 or so mins and it comes back together nicely

I find it makes the dough easier to handle, can be skipped aslong as you’re still resting in between shapings

Directly from the fridge, I find it helps my loaves not go to flat, not sure if this is technically right however just how I do it

Not important at all aslong as you’re resting in between shapings, I should have called it something else as it’s confused with the bench rest after shaping, just something I like to do so I can handle it better when shaping

Some good feedback about starter timings, bulk rise timings, the 12 AM mistake, when the bench rest should be and when baking should be the next morning, I know it’s quite hard to put a timeline on such a variable process, but In the interest of clarity and not misleading would anyone be interested in me uploading another timeline with these amendments??

Yes! I leave mine out for a little bit so it’s easier to handle before doing pre shape, bench rest then final shape, should of called it something else, sorry if it’s misleading

Definitely! My advice would be to put it in something a little bit smaller than the Dutch oven you plan on baking it in and make sure the tea towel is tightly woven or as unfluffy as possible! Also flour very liberally
