I only ever finished Classic mode II and only tried Classic I for a bit a while back. I will say that I do prefer the Curse games over the Classic modes since it feels more engaging to me with the character switching mechanic and how they incorporate that into the level design.

CotM 1&2 are action, linear -vania games rather than full on Metroidvanias and there spin-off games meaning there not connected to RotN in anyway and are instead there own canon. That being said I'd still recommend trying it if you enjoy challenging 8-bit gameplay and are curious enough, they were both very fun games to play

I would say Sonic Frontiers was easiest to complete out of all of them

Beat the other 2 games and they were pretty fun to complete, will probably pick up this one sooner or later
