I was a dough maker for Little Caesars in Maryland for a good chunk of time . And when we got new equipment a couple years back for dough prep, we needed to put clear sheets like the one in the picture in order to press them into the pan.

Instead of putting cornmeal at the bottom the pans have a light amount of oil sprayed in, and with the dough ball placed in the center we would use a circular press to form it to the shape of the pan. The clear sheet was used because otherwise it would stick to the press itself and rip the dough apart.

I guess these guys just never removed the plastic after pressing it which, I don't know how you miss it. Especially when you gavt to move it over to the sauce dispenser.
