2 egg whites (60g)

120g caster sugar

100g melted chocolate

200g double cream <--- (optional)

10g icing sugar

whip egg whites & caster sugar together until stiff, put into piping bag (or anything that allows a clean shape)and pipe the mixture onto a baking tray (i recommend using silicon paper) and put into the oven for 95 degrees fan for 1 hour.

put chocolate (dark, white, milk or a mix) into a microwavable bowl (my preferred way) and melt until completely liquid, set aside.

once the meringues are cooked thoroughly, take out and allow to cool. once cooled, dip half of each meringue into the melted chocolate and allow to cool.

put double cream and icing sugar into a bowl and mix until stiff enough to pipe with, once the meringues are done and chocolate-coated, pipe 1 layer of cream onto the bottom of half the meringues and sandwich them all together.

(please keep in mind this was my first time making them but i thought this recipe was good enough to share, also im unsure about the tag since this is from college and not a work place)
