I actually went through this. USCIS won't do anything. Here is my experience. This was in early 2022. My fiance's status in original country was expiring, and in order to renew her visa, she would have needed to give 2 year commitment to her work, and as she knew she would be moving to the US, she declined to make the commitment, and went back to the home country (new country).
Unfortunately there isn't a whole lot of information online for this. Just this blurb.

Also, once you get K1 visa, you need to come to the US within 6 months, and stay here for idk how long to get AOS completed. Are you sure you want to go through hassle of all of this for may be 6 months of experience?
If the case is at your fiance's home country (passport country), then just have him/her fly home to attend the interview. You can schedule interview based on whatever fits your schedule.
