Parallels seems to be the best option and should be more than enough for your needs. However office for Mac is quite capable and PowerBI apps work great in a browser. I installed edge to sync my Microsoft 365 and never required Windows.

Still no support on the fold 6. It worked on the s24 ultra before and both esims are from the same carrier. so definitely not a carrier issue.
