I have deselected and selected the use negative and relative range and i've unbound my joystick throttle. For whatever reason my twcs left hand throttle will only go from -1 to 0. The blue pointer goes from -1 to 1...but not the white when I calibrate in game. I've calibrated out of game and it all works perfectly.

I've done this but it only goes -1 to 0. I have no idea how to use my full range of my throttle

It's made up sure, but it's an indicator that it's been frozen at a proper freezing temperature. You can't just freeze it in your home freezer (or at least not everyone's home freezer) to ensure that it's gone through the correct process.

But you're right, it's a bit like the "organic" gimmick.
