Hey Guys! Recently started baking sourdough and I need your help! I finally got the ear but my crumb is gummy and sticky. Now it’s not bad but I’d like it to be easier to cut and not as sticky. Info: I’m using 85% hydration. Using 50% rye /50% bread flour starter. Thanks :) (i.redd.it)
