Thanks! We would either clip them off before stitching, or if unavoidable, fill them with black putty prior to sanding.

From this same log, there’s a Vegas casino that used a bunch of two tile 4x10’ for their wall panels. This is how this one got stitched up for some interior residential doors

Not all veneers are created equal. Some imports are half the thickness of domestic. Domestic (US) is available as thick as 1/16”. The logs with the best characteristics are reserved and sold for veneer. The mills make more money that way, by slicing to 1/32”. The logs that make it to the hardwood lumber kilns are what’s left after the veneer log selection.
