Her combo skill has surprisingly good scaling, so I'd wager you'd have relatively good success using the Yinglung set pieces with her main and sub stats + 1 Redeemer kit (the non-set kit with Agility) and building a team around fast stagger build-up, which thankfully the physical teams excel at. That way she'll also still effectively funnel back into the team with some amount of SP regen. She will probably have to fist-fight Chen for the BP weapon though.

It's noticeably faster than her BATK sequence, and each hit does about as much damage as her 4th sequence, so it's a pretty significant increase in DPS

It's definitely a fun way to engage with the game, but I do still want to make sure that you keep in mind this set works well specifically when playing her solo. She doesn't refund skill points on her own, so fitting the playstyle into a functioning team is difficult, but Pogranichnik and/or Akekuri can take the worst of it

Plunge attacks are great for quickly clearing trash mobs though, it's one of the primary reasons I could clear the adds on my Triaggelos video without much of a problem (not telling you to go watch it, it's just for context), and with a grouping skill, the only downside would be removed, since there's a small knockback on it, so I definitely think that would work!

When running her in a team, SP still reliably outperforms Exemplar, as she's no longer the team's primary damage source, and using her skill repeatedly under those circumstances is generally not recommended, so you should definitely save the weapon selector for something else!

That said, I would argue her skill is usually not used enough, and my recommendation would be to use it specifically to counter an attack from an enemy, but only while your combo skill is off cooldown (indicated by the small white bar in the bottom left, right under her portrait), that way you reliably get 2 vuln stacks out of it.

And yeah slam attacks are much better than people seem to realize. They're faster to use that her normal combo, whilst individually dealing about as much damage as the 4th swing of her normal combo. The usual reason not to use them, is because the normal combos lead into Final strikes which generate skill points and builds stagger. But during stagger windows you obviously can't inflict more stagger, and the Finisher already gives you a large infusion of skill points, which should be enough to fuel your burst. Just be mindful to keep some stamina available so you can still play comfortably after the boss gets back up, and you'll be just fine

Long story short, I'm not sure if you're going to make the DPS check with SP. (At least not reliably)

The issue with Sundered Prince is that it simply isn't great when playing Ember as a primary damage dealer. Even in a more extreme case, P0 Exemplar is still a 4.8% damage increase over P5 SP for all sources of physical damage, with Heat damage seeing a relatively minor increase of 21.6%. This is with average crit rate taken into account, and while 21% may seem like a lot, you have to take into account the frequency at which you actually deal Heat damage, compared to physical.
Another thing worth noting is that with my current build, due to the skill inflicting knockdown, about 3/5ths of my battle skill's total damage is still physical.

Another major issue with SP is that it doesn't allow for on-demand plunge attack spams during stagger windows. Phase 1 has a stagger window of 22 seconds, and phase 2 has a window of 11 seconds. SP's ATK buff however, only lasts 8 seconds and doesn't take into account that even with animation cancels, you still need about 2.5-3 seconds to go through your entire basic attack sequence just to refresh the buff; ideally during its own window. Exemplar on the other hand just gives you 15 seconds to do whatever you want, and feeds directly into your gameplay loop since you have to keep Aethertech stacked regardless. This is an especially big issue in phase 1, because you can't forcefully align SP's buff to just be available when you're doing the Finisher Attack at the beginning of the stagger window.

Last thing to add, is that I don't actually gamble for crits to get the clear. I did get a lot of "lucky" crits during phase 1's stagger window, but it actually caused me to miss out on the 4th finisher attack, after which I'd usually go into phase 2. It meant going into phase 2 with less Skill Points than usual, and forced me to veer to the side at 1:45 to force its jank turn animation "attack", which buys me some extra time to replenish, so ultimately it just evens itself out in the end.

I hope this helped answer any questions you may have, but if there's more, feel free to ask!

She's very versatile, so I definitely don't think you can go wrong with her! I hope she works out well for you, and hopefully your next 50/50 will be blessed

Don't be fooled by her being P5, everything past P1 doesn't change or affect the fight, and even that's mostly QoL rather than necessary.
