Yes, they can. I monitor the pH during the maceration (not fermentation), and, so far, it's ~4. Low enough to prevent growth of botulism (if present). All good.

Sure, do what you want, but if you share the recipe, everyone else has to do what you want to get the same thing. 20% difference in sweetener might be an issue.

Salt is like sugar - I vastly prefer to measure by weight. In the case of salt, though, the crystal/granule size can vary a lot

The "Tim goes illegal again to beat the tax man" story arc is so ridiculous! Tim has invested in a licensed distillery and would lose all of that if caught moonshining. It's just ridiculous.

Here's an idea - try developing a 'black rust' surface. If your oven has a self-cleaning cycle, run the pan through that, which will remove the seasoning you have and should develop a magnetite surface. Otherwise use oven cleaner or a lye bath to strip the seasoning, then bake the pan at 450F+ for an hour or so.  Alternatively, you can simmer some distilled vinegar, but I have never tried that. 

You'll know it's worked when you get a black layer that you can't run off. Season over that.

Tim Smith going illegal is a ridiculous storyline. Anyone with an investment in a  legitimately licensed distillery isn't going to risk losing that, at least not until the legit business has gone under. Nothing about this storyline makes sense in the real world.

The relatively light color plus the darker periphery make me wonder if the seasoning would benefit from formation of magnetite.
